Recipe: Pumpkin Baked Oatmeal

You’ve got to try this Pumpkin Baked Oatmeal. We love straightforward, yummy recipes here at KP Creek, and the warm, classic fall flavors of this oatmeal are perfect for Thanksgiving morning! Adapted from a traditional Amish Baked Oatmeal recipe, we added pureed pumpkin and spices for a seasonal twist.

Pumpkin Baked Oatmeal

Serves 9 (to serve a crowd, simply double the recipe!)

INGREDIENTS

  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 2 eggs, beaten
  • 1 cup pumpkin puree (NOT pumpkin pie filling)
  • 1 cup milk
  • 1 tsp. salt
  • 3-1/2 cups quick oats
  • 2 tsp. ground cinnamon
  • 1 tsp. pumpkin pie spice
  • 2 tsp. baking powder

DIRECTIONS

Mix all ingredients in a large bowl, adding baking powder last. Put in a greased 9×9 pan. Bake at 350 degrees for 1 hour. Serve with yogurt and your favorite seasonal toppings. (We used blueberries, candied pecans, and chocolate chips!)
