Recipe: Amish Scotcheroos

Quick & easy sweet treat!


I don’t know about you, but lately I’m a little short on time for a lot of everyday tasks — cooking, especially. I miss being in the kitchen.

This one is quick and easy, and I recently made them for a family barbecue where they were a huge hit!

Scotcheroos Recipe


  • 1 c. light corn syrup
  • 1 c. granulated sugar
  • 1 c. peanut butter
  • 6 c. puffed rice cereal
  • 1 pkg. semisweet chocolate chips
  • 1 c. butterscotch chips
  • Cooking spray, to coat the pan


  1. Pour corn syrup and sugar into large saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add puffed rice cereal and stir until well coated.
  2. Pour the mixture into a greased 13 x 9 pan and set aside to cool. In a double-boiler or a saucepan over low heat, melt chocolate and butterscotch chips together. Pour over top of cereal mixture and let stand until firm. Allow to cool, then cut into bars and serve.
